Spices can be added to a dish at many points throughout the cooking process. but the clearest expression of the spice itself comes through when it's used as a finishing ingredient or garnish.

A garnish is the easiest way to add spices to a dish, adding an intense burst of flavor. Spices are used as garnishes in virtually every cuisine: think sprinkling chili flakes on a slice of pizza, adding sumac to hummus, or stirring toasted garam masala into biryani.

Apply your finishing spice to the dish right before serving for a final burst of aromatic fragrance and flavor.

TRY IT OUT

BASIC

Sprinkle cured sumac over store-bought hummus and serve with pita or carrots.

ADVANCED

Slice zucchini lengthwise and sear in a hot, dry cast iron pan with a little salt until they are lightly charred and just softened. Chop the cooked zucchini into large pieces and toss with a bit of flavorful olive oil, cured sumac, black Urfa chili, oregano buds, and salt to taste.
