Our Flowering Hyssop Thyme is a very special herb that's only grown in the Middle East, where it is the primary ingredient in the za'atar spice blend (sometimes spelled zaatar, za'tar or zatar), along with sumac and sesame seeds. It has an ancient history of culinary and medicinal usage, and it has a beautiful floral, herbaceous flavor and aroma. Use it in place of regular thyme with roasted chicken, grilled vegetables and tomato sauces.

COOKING
- Add to stocks, soups, stews - especially your tomato sauces
- Toss with vegetables, olive oil, salt, pepper and chili flakes before cooking
- Infuse into your butter and use it to baste your meats or veggies
- Pairs well with: Cured Sumac, Wild Mountain Cumin, Smoked Pimentón Paprika

It’s perfect with beef especially and in scalloped potatoes.

I love this thyme, it is slightly more floral than I’m used to cooking with but I’ve found it to be really additive to dishes! The complexity of the flavor comes out when cooking in different ways. I never knew such a common spice could make such a difference. These spices aren’t cheap but I promise you it is so worth it!!

These were a gift, but all indications are that the spices are very much being used and enjoyed!
