We're so excited to be partnering with our friend, chef and cookbook author Anna Francese Gass to combine autographed copies of her beautiful new cookbook, Heirloom Kitchen, with a set of 3 essential spices used throughout the book: Silk Chili, Wild Mountain Cumin, and New Harvest Turmeric

In Heirloom Kitchen, Anna shares the stories and recipes for specialty dishes (one hundred of them) from forty women from around the world, all immigrants to the United States. The recipes include:

  • Kay's spiced & fried Parsi turkey kebabs, from India
  • Magda’s savory and vinegery Pork Adobo from the Phillippines
  • Shari’s Fesenjoon, an incredible stew with walnut and pomegranate, from Iran
  • Tina’s perfect, plump dumplings from Northern China
  • Anna’s mother’s (!) meatballs in tomato sauce from Southern Italy

In addition to sharing their recipes, each woman shares her recollections of coming to America — stories of hardship and happiness — that illuminate the ways that food and cooking became a comfort and a respite in a new land as well as a tether to their native cultural identities.

In Anna's own words:

"I truly believe recipes and flavors have the ability to transport us to different places and times. When I became a chef, I grew even more fascinated by the ways in which people from all over the world express themselves through their cooking. Spices are the building blocks of regional cuisines and cultures.

Typically, the prevalence of a specific spice or herb in a certain cuisine is directly linked to its availability in that region, and therefore we can learn a lot about global cultures by exploring the ingredients that are most widely used in their cooking.

While writing my book, Heirloom Kitchen, I had the privilege of learning first hand how to cook heritage recipes from incredible immigrant women, and through that experience, I got to dive deeper into the origins of different spices and how they came to be defining culinary features.

We don't have to limit the spices we use based on where we are in the world, and now more than ever, it is important to continue exploring the world through the foods we prepare and enjoy around our tables."

You can hear more about Anna's story on Ethan's podcast, Why Food? on Heritage Radio Network.
