Pompona Vanilla is an extremely rare species of vanilla, and ours is wild-harvested in the Peruvian Amazon. You've never had vanilla like this before.
The DIY Vanilla Extract Kit contains chopped-up, vine-ripened split pods, perfect for making your own vanilla extract. We have 10 grams of chopped vanilla and room to add 100ml of your favorite spirit.
Fill the jar with the vodka, whiskey or rum and let it infuse for at least two months, but as long as you'd like. Top off frequently, and use as you'd use any other vanilla extract. We also recommend spreading a small piece of plastic wrap or wax paper over the top of the jar (underneath the lead) to form an extra tight seal.

If a regular vanilla pod is like a string bean, Pompona Vanilla is like a sugar snap - bigger, fatter, sweeter and fuller of flavor.
These incredibly rare, wild (literally and figuratively) pods come from the Peruvian Amazon. Wild vanilla is virtually unheard of, and impossible outside of vanilla's native range (from Mexico to northern South America).
Vanilla orchids are only pollinated by a couple of species of bee, which only live in the Americas. All commercial Vanilla planifolia (most of which is grown in Madagascar) has to be hand-pollinated by the farmer once per year when the flowers bloom for just 3-5 hours.
Pompona Vanilla is pollinated by a single species called the dilemma orchid bee (amazing), and is then either picked green and cured by hand by 3 foragers over about 6 weeks, or ripened and split on the vine.
I’ve had the vanilla marinating for about 2 months now and it’s a wonderful product! The only issue I have is the jar/lid leaks all over the place. The jar and lid that the vanilla beans are shipped in is the same as all the dry spices - it needs to be a jar that is suitable for liquids.
I have been completely (and happily!) astonished by the quality of all the products I've ordered from Burlap & Barrel, and this is no exception!
Not sure I did it right ~ filled the bottle with vodka and have left it to steep. It looks watery and has lots of particles ~ like I should strain it. Smells good but I’m kind of leery of using it with the straining question. Could totally be user error ~
I love this vanilla! Fun and easy to add the alcohol of your choice and top it up as needed. Great favor and aroma. However, the bottle doesn’t seem to be designed for liquids - there’s always liquid under the lid and dripping down the outside when I open it, even though I store it upright and try to careful when walking from the pantry to the counter. I plan to decant it into a more traditional narrow-mouth vanilla bottle…
Great kit to make a special addition to cocktails in our post Covid appreciation of the cocktail! Buy it!
