Black Urfa Chili (1.8 oz glass jar) Our black chili comes from Urfa, Turkey, where it has been grown and cured for centuries. It has a rich, malty flavor with a lingering burn. The chilis ripen to a deep maroon color, then is cured in its own juices to give it a deeper, umami flavor and beautiful dark color.
Wild Mountain Cumin (1.5 oz glass jar) Our wild cumin is hand-picked by foragers in the Hindu Kush mountains of Afghanistan. They are tiny, oblong and black with long stems. Our wild mountain cumin is renowned in Afghanistan and throughout central and south Asia for its delicious flavor as well as its medicinal properties. It has a savory, penetrating aroma and bright, umami flavor evocative of grilled meats and sweet caramelized onions. Flowering Hyssop Thyme (0.8 oz glass jar) Our flowering hyssop thyme is a very special herb, only grown in the Middle East, where it is the primary ingredient in the za'atar spice blend along with sumac and sesame seeds. It has an ancient history of culinary and medicinal usage, and has a beautiful floral, herbaceous flavor and aroma.
Wild Icelandic Kelp(2.5 oz glass jar) Harvested from the bottom of the frigid North Atlantic off the coast of Iceland, this wild oarweed kelp has a deep umami flavor and oceanic minerality, salty and briny. Perfect for adding depth, savoriness and body to soups, for finishing meat and seafood dishes or as a salt substitute.
Royal Cinnamon(1.8 oz in a glass jar) Our Royal Cinnamon has been harvested in the mountains around the ancient Vietnamese capital city of Huế for milennia. The same species as Saigon cinnamon, this is an heirloom variety not widely harvested or exported, and exemplifies the intense sweetness and spiciness for which Vietnamese cinnamon is prized. Use it in place of Saigon or other cinnamons in pastries and baked goods, or sprinkle into rich, savory meat or tomato-based dishes.
Cloud Forest Cardamom (1.7 oz glass jar) Our cardamom comes from the cloud forests of Alta Verapaz, Guatemala, grown on a biodynamic, single estate farm in the mountains. (Check out our video about the farm.) Our yellow cardamom is sweet and tart, reminiscent of summer fruits, fresh herbs and cut grass. The cardamom fruit turns yellow is it ripens and has a softer, sweeter flavor than standard green cardamom.
