This luxurious and savory-sweet single-origin chocolate bar was made in collaboration with Goodnow Farms.

Tom and Monica, the chocolate-makers at Goodnow Farms in Sudbury, Massachusetts, wanted to make a chocolate bar with an umami twist, so they started with our crispy, sweet-savory Caramelized Onions from Wolfe Family Farms in upstate New York. They added the caramelized onions directly to the chocolate grinders, so the complex flavors of the onions completely infused with the chocolate. The result is smooth, creamy, sweet and umami deliciousness! The cacao is single-origin from El Carmen in central Nicaragua, and it is grown on small family farms. Goodnow makes their chocolate in small batches, using their individualized roasting and conching profiles to coax the most intense flavors out of each bean. They freshly press cocoa butter from the same beans used to make the chocolate, which ensures that each bar represents true single-origin flavor!

These chocolate bars are handmade in every sense of the word, right down to the individual wrapping of each bar. The result is a luxurious bar of chocolate that is some of the best we have ever tasted.

ABOUT GOODNOW FARMS:

Goodnow Farms is a single-origin chocolate company that hand-makes each chocolate bar on their farm. They purchase raw cacao directly from farmers throughout South America, which enables them to ensure that farmers are fairly compensated and that the farming practices that they are using are sustainable. They visit the farms personally, trade directly with the farmers and roast the cacao at their 225-year-old-farm in Massachusetts. Like coffee, different cacao beans have different flavors. By using beans sourced from only one farm or region, they are able to highlight the distinct flavor characteristics of that particular bean.
