Za'atar (the leaf rather than the spice blend) is so rare outside the hilly, rocky microclimate of the eastern Mediterranean where it grows wild that it is considered to be endangered. We source it directly from a cooperative around the Palestinian city of Jenin, where it has thrived in the stony hills for millennia (and is even mentioned in the Bible.) It's a key ingredient in the classic Middle Eastern za'atar blend, but the leaves alone are bursting with a wild, peppery, completely addictive flavor reminiscent of mint, thyme and lavender.

The leaves are small and delicate, with a downy natural coating. Each leaf has been carefully picked by hand, dried and packed especially for us (and you!) Toss them with vegetables to grilled or roast, infuse them into oil for a complex, herbal kick, add them to soups, stews, stir fries, pan sauces, melted butter for basting and anything else you can imagine. You won't be able to stop adding them to everything you cook.
