Banana Breakfast Parfait

"This is my answer to wanting dessert for breakfast—add some yogurt and fresh fruit to a quick stovetop granola and we can call it a balanced meal! Turn it into more of a banana pudding vibe by building the parfait in a jar and refrigerating it overnight."
Ingredients
- 1 Tbsp butter
- ½ tsp Ground Cloud Forest Cardamom
- 6 Tbsp old-fashioned rolled oats
- 2 Tbsp Toasted Palm Sugar
¾ cup Greek yogurt (preferably whole milk)
½ tsp Royal Cinnamon Extract
- 1 large banana, sliced
Directions
Make the granola: To a medium pan over low heat, add butter, cardamom, oats and sugar. Stir with a silicone spatula until sugar melts and oats begin to toast, and continue stirring to coat the oats with the fragrant caramel, 3 to 4 minutes total. Immediately remove from heat and transfer mixture to a shallow bowl to stop the sugar from burning.
Allow granola to cool completely before breaking into smaller pieces.
Meanwhile, in a medium bowl, stir together yogurt and cinnamon extract until smooth.
Assemble the parfait: In a 16-oz. glass jar or bowl, spoon in ¼ cup yogurt, ⅓ of the banana slices and ⅓ of the granola. Repeat the layering twice more and enjoy!
