Everything Bagel Cold Sesame Noodles

Two New York classics taste better together! For a one-dish meal, add any vegetables lingering in your fridge, like the springtime asparagus and garlic scapes used here.
Ingredients

14 oz soba or lo mein noodles

4 Tbsp tahini paste

1-2 Tbsp Chinese black vinegar

1-2 Tbsp soy sauce
-
1-2 Tbsp toasted sesame oil

Optional: 1 bunch of blanched asparagus, chopped fine

Optional: 1 bunch of garlic scapes, chopped fine
Directions
Boil your noodles in lightly salted water until soft, then drain and rinse under cold water until the noodles are cool to the touch. Set aside.
In a large mixing bowl, combine the tahini, black vinegar, soy sauce, sesame oil, Everything Bagel Crunch and honey. Use your hands for best results and so you can taste for seasoning! When the sauce is salty-umami-tangy-sweet to your liking, add the noodles and optional vegetables, mixing with your hands again to fully incorporate. Serve immediately or chill in the refrigerator for up to 3 days.
