Lemon-Blueberry Griddle Cakes
Light, fluffy, studded with blueberries and just a little different with the addition of Blue Turmeric.

Ingredients

1 cup all-purpose flour

½ cup sugar

1-2 tsp Blue Turmeric powder (may start with 1 tsp and add to taste)

1½ tsp baking powder

½ tsp salt

3 large eggs
-
1 cup buttermilk
-
3 tbsp melted unsalted butter
-
2 Tbsp lemon juice
-
1 Tbsp grated lemon zest
-
1½ tsp vanilla extract
-
1 pint fresh blueberries
Directions
Sift dry ingredients together.
In another bowl, combine eggs, buttermilk, butter, lemon juice, lemon zest, and vanilla.
Whisk wet ingredients into dry.
Ladle ¼ cup batter per cake onto hot griddle and top with blueberries.
Cook until 11 bubbles appear on top. Flip, then cook 3 more minutes, until cooked through.
