Cardamom Rice Pudding

"Cardamom is a beautiful spice that comes alive in the presence of creamy milk and sweet rice. Sweeten to taste at the end (I add just a couple of tablespoons of sugar to let the cardamom shine), and be careful not to step away from the pot for the last 10 minutes of cooking time—you’ll need to stir frequently to prevent burning!"
Ingredients
- 1 cup rice, soaked overnight and drained
- 1 cup water

2 tsp Ground Cloud Forest Cardamom

3 ½ cups whole milk, divided
- Golden Crystal Turbinado Sugar, to taste
- Sweet apricots, for serving (optional)
Directions
In a large pot over medium-high heat, add soaked rice, water, cardamom and 3 cups of milk. Bring to a boil, stirring occasionally.
Reduce heat to a low simmer and cook until rice is tender and milk turns glossy, about 12 minutes. Stir occasionally to make sure rice is not sticking to the bottom of the pot.
Continue cooking, stirring frequently, until ideal pudding consistency is reached, about 6 more minutes. Remove from heat and add in remaining ½ cup milk to loosen.
Sweeten to taste with sugar, and top with fruit if desired.
