"This is my favorite cookie bar on the planet, a true New England treat. I would eat warm, spicy hermits in the middle of a heat wave, but they’re much nicer with a mug of something warm on a chilly winter day."


Extra-Spicy Hermit Bars

Ingredients

  • 2 cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • 1 tsp salt

  • 1 tsp Royal Cinnamon

  • ½ tsp Grenada Gold Nutmeg (ground)

  • ¼ tsp Zanzibar Black Peppercorns (ground)

  • ¼ tsp Pemba Cloves (ground)

  • 1 cup Jaggery Brown Sugar (or standard brown sugar)

  • 1 stick butter

  • 1 egg

  • ½ cup molasses

  • 1 cup raisins or other dried fruit

Directions

  1. Heat oven to 350 °F, grease a cookie sheet (9x13”).

  2. Combine dry ingredients in a bowl.

  3. Cream butter and sugar, add egg and molasses and beat until combined.

  4. Carefully beat in the dry ingredients and raisins, and spread the dough on the cookie sheet.

  5. Bake for 15-20 minutes, or until done to your liking. As always, I like ‘em squidgy!
