Honey, Saffron, Mint Iced Tea

"This is the iced tea I make when I want something refreshing but a little special — the saffron adds a golden glow, the mint keeps it bright, and the honey brings it all together. It’s my go-to for warm afternoons and lazy weekends."

Ingredients
2 cups water
2 Tbsp Amber Woodland Honey
2 Tbsp mint
A pinch of saffron strands (about 5 strands)
Directions
Bring water to a boil, remove from heat and stir in mint and saffron. Allow to infuse for 6-7 minutes, or to your liking.
Remove mint and saffron with a slotted spoon or strainer.
Stir in honey, placing the pot back on the stove if honey is not dissolving fully.
Enjoy warm or let cool to room temperature and pour over ice. Delicious with a squeeze of lemon as well.
