Tzatziki Hot Dog

A Greek-inspired tzatziki dog with Cured Sumac/Silk Chili Pickled Onions.
Ingredients
Cured Sumac/Silk Chili Pickled Onions

1 medium red onion

1 Tbsp Cured Sumac
-
1 Tbsp Silk Chili
-
1 Tbsp olive oil
-
Β½ lemon
-
Pinch of salt
Tzatziki
-
2 Persian cucumbers
-
1 cup Greek Yogurt
-
1 lemon
-
1 tsp Purple Stripe Garlic Powder
-
Pinch of salt
-
Handful of dill
Assemble Your Hot Dog

Hot Dogs (4-6)

Hot Dog Buns (4-6)
Directions
Make the pickled onions
Mix 1 Tbsp sumac and 1 Tbsp Silk Chili.
Slice your red onion thinly, using a mandoline if you have one.
Add 1 Tbsp of your spice mixture.
Add 1 Tbsp olive oil, the juice of Β½ lemon and a pinch of salt.
Let macerate for 20 minutes, tossing occasionally.
Make Tzatziki
Grate your cucumbers into a bowl, then add to a cheesecloth or paper towels and squeeze to drain.
Add your yogurt to a medium bowl and mix in the grated cucumbers, lemon juice, garlic, salt and dill.
Chill in the fridge while you make the hot dogs.
Make Your Hot Dogs + Assemble
Cook your hot dogs as desired.
Add the tzatziki to the inside of your bun.
Top with your hot dog, a pile of pickled onions and finish with extra dill.
