Kebab Spiced Ground Beef Bowl with Crispy Chickpeas

A hearty, flavor-packed bowl with kebab-spiced ground beef, crispy chickpeas, fresh vegetables, and a creamy yogurt sauce.

Ingredients
- 1 can chickpeas, drained and rinsed
2 Tbsp olive oil, divided
1 tsp salt, divided
2 Tbsp + ½ tsp Kebab blend, divided
1 cup long grain white rice, uncooked (or make more!)
- 1 lb ground beef
- 2 medium carrots, peeled and shredded
1 cucumber, thinly sliced

1 tsp Granulated Garlic
1 tsp Minced Onion
- 1 lemon, juiced

Directions
Preheat oven to 400°F.
Dry the drained chickpeas completely with a paper towel — the drier the better. Toss with 1 Tbsp olive oil and a pinch of salt. Spread in a single layer on a baking sheet and roast for 30 minutes, shaking the pan halfway, until golden and crispy. Once finished cooking, toss in 1 Tbsp Kebab blend.
Cook rice according to package instructions. Season with a pinch of salt when done.
Whisk together the Greek yogurt, Minced Onion, Granulated Garlic, lemon juice, ½ tsp of Kebab blend and a pinch of salt. Continue to add 1 tsp of water as you mix until you reach desired consistency. We are aiming for a pourable sauce, so you might need 3-4 tsp. Refrigerate until ready to use.
Heat remaining 1 Tbsp olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up, until browned and cooked through, about 8 minutes. Add 1 Tbsp Kebab blend, stir well and cook for an additional minute.
Assemble the bowls: Divide rice between bowls. Top with Kebab-spiced beef, carrots, cucumbers, crispy chickpeas and any additional toppings you like. Spoon the yogurt sauce generously over everything, and finish with fresh parsley or mint if using.
