Aash / Noodles with Meat Sauce and Yogurt

"This recipe shows off Afghanistan’s delicious history as a hub on the Silk Road, combining Chinese-influenced noodles with yogurt and spices. Adapted from my mother-in-law Shazia, this was my wife’s childhood favorite!"


Aash / Noodles with Meat Sauce and Yogurt

Ingredients

  • 1 lb ground beef, mushrooms or tofu

  • 1 large onion, diced

  • 3 garlic cloves, minced

  • 1 Tbsp tomato paste OR 2 tsp Sun-Dried Tomato Powder + 2 tsp water

  • 1 tsp salt

  • 1 tsp Robusta Black Peppercorns, ground

  • 1 tsp Cobanero Chili Flakes

  • 1 tsp Smoked Pimentón Paprika

  • 1 tsp dried Mint!!

  • 1 lb fresh fettuccine or linguine, cut to half length

  • ¼ cup whole milk Greek yogurt or labneh

Directions

  1. Sauté onion, ground beef (or mushrooms/tofu), garlic, spices (except mint) and tomato paste until the beef is fully cooked and a sauce has formed, about 20 minutes.

  2. Bring salted water to a boil and cook noodles until just al dente, about 5 minutes.

  3. Add noodles into sauce and cook until the noodles are done, another ~5 minutes. Add salt to taste.

  4. Serve with yogurt and garnish with dried mint and chili flakes to taste.
