Abena's 5-Ingredient Jollof Rice

This quick, streamlined recipe makes an incredibly tasty side dish and is perfect for when you don't feel like chopping lots of vegetables.
Ingredients
2 Tbsp Oil
1 Tbsp finely diced onion (optional)

1 Tbsp Jollof Rice West African Seasoning
1 Tbsp tomato paste
1 cup long-grain rice (washed & drained)
1 cup water or stock

Salina Crystal Salt, to taste* (optional)

Iru (optional)
Directions
If using onion, sweat in oil on low-medium heat for 1-2 minutes. If using Iru, add 2-3 beans and cook for 1 minute to release the oils and flavor. Add the tomato paste to the oil and cook for 2-3 minutes, stirring.
Add in the Jollof Seasoning while stirring, to bloom for 1 minute.
Add the washed rice and stir for 2-3 minutes, until the rice is evenly coated.
Add in water or stock, salt to taste, stir, and cover the pot.
Turn the burner to low heat and allow the rice to cook for 20 to 30 minutes.
Salt to taste and serve as is, or with your desired protein and vegetables.
