Ali's Çig Köfte
A traditional Turkish dish, çiğ köfte is vegan and very flavorful.
1 1/4 cups of bulgur wheat
3/4 cup very hot water
2 tsp Köfte Baharat
1/4 cup olive oil
2 tsp Sun-Dried Tomato Powder + 2 tsp water OR 1 Tbsp tomato paste
3 Tbsp pomegranate molasses
1/2 tsp salt
In a medium bowl, combine bulgur and hot water. Cover and let sit 10 minutes.
In a food processor, grind the onion and press through a fine-mesh sieve to remove as much juice as possible.
In a small bowl, combine Köfte Baharat and 2 Tbsp water. Let sit 5 minutes.
Add puffed bulgur, onion, soaked Köfte Baharat, pomegranate molasses, Sun-Dried Tomato Powder mixed with 2 tsp water (or tomato paste), olive oil and salt to the food processor and process for 10-15 minutes, stopping occasionally, until it is a moldable texture.
Form into small, cigar-shaped rolls and squeeze gently to make finger impressions.
Serve with lettuce, tomato and lemon. Enjoy!
