Doña Irma's Cobanero Salsa

Doña Irma lives in Guatemala and is the sister of cardamom partner farmer Don Amilcar. She keeps this salsa on the table to drizzle over everything!

Ingredients

1 lb. fresh tomatoes, halved
-
2 cloves of garlic
-
5 stalks cilantro, chopped
-
1 yellow onion, quartered
-
1-2 tsp Cobanero Chili Flakes
-
1 tsp salt
Directions
Grill or roast tomatoes, garlic and onion until browned and very soft.
Mash or blend together in a bowl.
Add Cobanero chili flakes, cilantro and salt to taste.
