Ingredients: 3 Tbsp French Onion Vinegar; 3 Tbsp EVOO (we used an Abrequina for this but any would work); 1 Tbsp Dijon mustard; ½ tsp salt; ½ tsp Za’atar Oregano; ½ tsp Dill &amp; Parsley blend; ¼ tsp Zanzibar Black Peppercorns; 2 cucumbers, sliced; 1 Hungarian wax pepper, sliced; 2 tomatoes, sliced; Feta, sliced; Mozarella, sliced; Fresh dill; Fresh basil leaves; Fresh mint leaves

This savory, herby vinaigrette is perfect for a fresh salad of sweet tomatoes, cooling cucumbers and cheery sweet peppers. Slice the vegetables and cheeses and then gently toss with the vinaigrette until everything is well-dressed. Top the salad with some fresh dill, basil and mint if you'd like.

Ingredients

For the vinaigrette:

3 Tbsp French Onion Vinegar
3 Tbsp EVOO (we used an Abrequina for this but any would work)
1 Tbsp Dijon mustard
½ tsp salt
½ tsp Za’atar Oregano
½ tsp Dill & Parsley blend
¼ tsp Zanzibar Black Peppercorns

For the salad:

2 cucumbers, sliced
1 Hungarian wax pepper, sliced
2 tomatoes, sliced
Feta, sliced
Mozarella, sliced
Fresh dill
Fresh basil leaves
Fresh mint leaves

Directions

For the vinaigrette:

Mix the vinegar, mustard, herbs, salt and pepper and allow to macerate for about 5 minutes. Once the herbs have hydrated, slowly whisk in the olive oil. Transfer to a jar or bottle, and shake before dressing.
