French Onion & Za’atar Vinaigrette

This savory, herby vinaigrette is perfect for a fresh salad of sweet tomatoes, cooling cucumbers and cheery sweet peppers. Slice the vegetables and cheeses and then gently toss with the vinaigrette until everything is well-dressed. Top the salad with some fresh dill, basil and mint if you'd like.

Ingredients

3 Tbsp French Onion Vinegar
3 Tbsp EVOO (we used an Abrequina for this but any would work)
1 Tbsp Dijon mustard
½ tsp salt

½ tsp Za’atar Oregano

½ tsp Dill & Parsley blend

¼ tsp Zanzibar Black Peppercorns
2 cucumbers, sliced
1 Hungarian wax pepper, sliced
2 tomatoes, sliced
Feta, sliced
Mozarella, sliced
Fresh dill
Fresh basil leaves
Fresh mint leaves

For the vinaigrette:
Mix the vinegar, mustard, herbs, salt and pepper and allow to macerate for about 5 minutes. Once the herbs have hydrated, slowly whisk in the olive oil. Transfer to a jar or bottle, and shake before dressing.
For the salad:
Toss the vegetables and cheese with the vinaigrette, garnish with the herbs and a bit more dressing, and serve!
