Pavlova with Cardamom Coconut Whipped Cream

Ingredients
4 egg whites, at room temperature

1/8 tsp salt
ยฝ tsp cream of tartar
1 cup granulated sugar, pulsed in a blender or food processor until fine
2 tsp cornstarch

ยผ tsp Cardamom Extract (or Vanilla Extract, optional)
1 ยฝ cups heavy whipping cream, cold
2 Tbsp confectionersโ sugar

1 Tbsp Coconut Sugar (see note)

ยฝ tsp Cardamom Extract

A drizzle of Amber Woodland Honey
Fresh fruits of your choice (I like blackberries, raspberries, blueberries and/or figs here!)
Fresh mint, to garnish
Topping
Directions
Preheat oven to 200ยฐF. Line a baking sheet with parchment.
Pulse 1 cup granulated sugar in a blender or food processor until fine. Set aside.
In a large bowl or stand mixer fitted with whisk attachment, beat the egg whites on medium-high speed until foamy. Add in salt and cream of tartar. Continue beating until soft peaks form.
In a medium bowl, combine the sugar and cornstarch. Slowly add to egg mixture in small increments while continuously beating on medium speed.
Add the cardamom extract (if using) and continue beating on medium-high for 1-2 minutes. The egg mixture should appear glossy and start to stiffen.
Spread the meringue onto the parchment, making a circle about 8โ in diameter. Shape the edges just slightly higher than the center.
Bake for 70 minutes, then turn the oven off and leave the door closed for at least one additional hour.
Topping
In a large bowl or stand mixer fitted with whisk attachment, whip the cold heavy whipping cream with the confectionersโ sugar and coconut sugar until thickened. Add the cardamom extract and continue whisking until soft peaks form.
When the meringue has completely cooled, spread the whipped cream over the top.
Drizzle with honey, then top with your favorite fresh fruits and mint!
Recipe Note
Please note that the addition of coconut sugar will slightly darken the whipped cream.
