Radish Salad with Blue Poppy Seed Dressing
Makes a great lunch by itself or an appetizer/side dish.
Ingredients
Rainbow Radish Salad Base

Radishes (choose varieties), thinly sliced

Red onions and/or scallions, thinly sliced

Persian or Kirby cucumbers, thinly sliced whole rounds

Granny Smith or other tart green apple, thinly sliced
Blue Poppy Seed Dressing

Thick, plain Greek yogurt and/or sour cream
-
Fresh lemon juice
-
Freshly grated lemon zest
-
Blue Poppy Seeds
-
Salt
Garnish
-
Blue Poppy Seeds

Delfino cilantro sprigs
Directions
Combine sliced radishes, onion, scallions, cucumber, and apple in a bowl. In another bowl, mix together the dressing ingredients.
Pour the dressing on top of the salad, and gently toss to coat thoroughly. At this point, the salad looks thick.
Cover, chill, and within 2 hours, the salt extracts juices from the salad ingredients to thin-out the dressing.
Gently toss again. Put into a serving bowl, garnish with blue poppy seeds and fresh cilantro.
