Ingredients

1 Tbsp nigella seeds
1 Tbsp white sesame seeds
2 Tbsp extra-virgin olive oil, plus more for brushing
1 ⅓ cups whole-wheat flour (170 g)
1 ½ tsp baking powder
1 Tbsp granulated sugar
½ tsp kosher salt, plus more for topping
¼ cup water
Directions
In a medium pot over medium heat, toast nigella and sesame seeds, stirring frequently, until sesame is golden. Add olive oil and remove from heat. Let cool.
In a large bowl, whisk together flour, baking powder, sugar, and salt. Pour in oil mixture and use clean hands to mix in until thoroughly combined.
Add water and knead until dough is cohesive and evenly moistened. (Add more water 1 teaspoon at a time as needed if dough is cracked and dry; it should not be so moist that it sticks to your hands or the bowl.)
Preheat oven to 350°F. Roll dough into a ⅛”-thick rectangle. Using a knife or pasta cutter, trim dough into 1 ½” by 3” rectangles and transfer to two large baking sheets. Brush with more olive oil and sparingly sprinkle with salt.
Bake until edges turn deeply golden, 12 to 14 minutes. Let cool completely before serving.
