Sour Plum Sardine Toast

"For this easygoing toast, any bread, combo of toppings and flavor of oil-packed sardines will do! I love pairing dark rye bread with smoked sardines, creamy avocado, sweet tomatoes and crunchy onions. Add a drizzle of the sardine oil that comes in the can for a tasty no-waste dressing, and be more generous with the plum powder if you like it extra bright and lemony!"

Ingredients

2 slices bread, toasted

1 Tbsp mayo

Handful arugula or lettuce
-
½ avocado, sliced

1 small tomato, sliced

¼ small red onion, sliced

1 (3.5-oz.) can oil-packed sardines

1 tsp Sour Plum Powder
Directions
Spread mayo on toasted bread and top each slice with arugula, avocado, tomato, onion and sardines.
Spoon a little sardine oil over both toasts as a quick dressing, then sprinkle plum powder evenly over top.
