Sri Lankan Sago Pudding (Saw Kanda)

Ingredients
1 cup instant tapioca or sago
2 cups water
3 cups full-fat coconut milk or milk of choice

1 ½ cups brown sugar

1 Cinnamon Quill

2 cardamom pods, crushed (or ½ tsp ground cardamom)

Pinch salt
1 Tbsp raisins
1 Tbsp chopped nuts (cashews and almonds are nice)
Directions
Add water, cinnamon and cardamom to a pot over medium heat.
Add tapioca or sago and stir gently, cook for 2 mins.
Add sugar and coconut milk / milk slowly, bring to a simmer and cook, stirring, until done.
Add salt, then remove from heat and garnish with nuts and raisins.
