Sri Lankan Sago Pudding (Saw Kanda)

βThis pudding is really good served hot on a cold day, or served cold on a hot day.β
 
                      Ingredients
- 
1 cup instant tapioca or sago 
- 
2 cups water 
- 
3 cups full-fat coconut milk or milk of choice 
- 
            
1 Β½ cups brown sugar 
- 
            
1 Cinnamon Quill 
- 
            
2 cardamom pods, crushed (or Β½ tsp ground cardamom) 
- 
            
Pinch salt 
- 
1 Tbsp raisins 
- 
1 Tbsp chopped nuts (cashews and almonds are nice) 
Directions
- Add water, cinnamon and cardamom to a pot over medium heat. 
- Add tapioca or sago and stir gently, cook for 2 mins. 
- Add sugar and coconut milk / milk slowly, bring to a simmer and cook, stirring, until done. 
- Add salt, then remove from heat and garnish with nuts and raisins.
