Sweet Apple Giardiniera

"At its simplest, giardiniera is veggies pickled in vinegar and oil. This version incorporates a crunchy, hearty Gold Rush apple in lieu of the more traditional celery and gherkin, but so long as you use about 6 cups of chopped veggie (or fruit!), you can customize your mix as you'd like. White distilled vinegar gives a cleaner taste while apple cider or white wine vinegar lends a sweeter acidity. The choice is yours!"

Ingredients
1 cup chopped carrots (about 3 medium)
1 cup chopped red bell peppers (about 1 pepper)
1 cup chopped hot peppers (about 2 peppers)
1 cup chopped apple (about 1 small apple)
2 cups chopped cauliflower
2 Tbsp kosher salt
4 cloves garlic, chopped
2 Tbsp granulated sugar

2 Tbsp Pickling Starter
1 ½ cups white distilled vinegar
½ cup extra-virgin olive oil
Directions
In a large bowl, toss all chopped vegetables and fruit with salt until evenly combined. Let sit 30 minutes to 1 hour, then drain off all liquid thoroughly. (Optionally, for less salty pickles, give the mixture a quick rinse.)
Prepare two clean pint-sized or one quart-sized glass jar. Divide garlic, sugar and pickling starter between the jars, then pack in marinated vegetable mixture tightly. Pour in ¾ cup vinegar and ¼ cup oil into each jar, then secure lid tightly and shake to combine.
Let pickles sit for 1 day before serving. Store in refrigerator.
