Crescent Caraway is bright and herbal, with a fresh, lively aroma that sets it apart from the caraway most people know. Its flavor leans green and aromatic rather than heavy, with tasting notes of dried mint, red radish and warm, freshly baked bread.

These seeds are grown sustainably in Rajasthan, where the dry climate and long growing season help concentrate their essential oils, giving them remarkable fragrance and depth.

Use Crescent Caraway in homemade rye bread, pickles and cheeses, or anywhere you want gentle warmth and herbal complexity. It’s excellent in curries and stews and can even stand in for cumin, coriander or fennel when you want something a little brighter and more aromatic.

Sourcing

Our Crescent Caraway comes from smallholder farmers in Pali, Rajasthan, sourced through our partner company Pavitramenthe. Founded by Nihal in 2015 after years working with organic farmers supplying Dr. Bronner’s, Pavitramenthe is built around a farmer-first model with long-term relationships and a 100% buy-back guarantee.

Nihal began farming organically in 2002 and gradually worked with neighboring farmers to transition their land as well. Today, the company partners with thousands of farmers across northern India, including about 2,800 growers in the Pali region. Beyond purchasing crops, Pavitramenthe invests in farmer-led initiatives including training programs, materials, medical care and social support.

Rajasthan’s dry climate and long growing season help concentrate the caraway’s essential oils, giving these seeds their vivid aroma and bright, herbal depth. During our sourcing visit to Pali, we saw firsthand how carefully the seeds are harvested, cleaned and dried to preserve their fragrance from field to jar.
