Baked Feta Chicken

Ingredients

180 g chicken breast, cut into cubes (about 0.4 lb)

150 g sweet peppers, chopped (about 1 cup)

1 small sweet onion, sliced (optional)

½ Tbsp The Umami Blend

½ Tbsp Chicken Basquaise

1/8 tsp Szegedi 178 Hot Paprika

Extra virgin olive oil spray

Salt, to taste (optional)

30 g reduced-fat feta cheese, crumbled (about ¼ cup)
Directions
Preheat the oven to 360°F
Place the chopped sweet peppers and onions on a parchment-lined baking tray. Season with Umami Blend, a pinch of salt, and spray with extra virgin olive oil. Toss to coat.
In a separate bowl, season the cubed chicken breast generously with Chicken Basquaise. Add to the tray with the vegetables.
Sprinkle on Hot Paprika, toss everything together, and spread in an even layer.
Roast in the oven for 15 minutes.
Remove the tray, add the crumbled feta, and gently mix.
Return to the oven for an additional 5-10 minutes, until the feta softens and the chicken is fully cooked.
