"Anytime I get to the end of a tortilla chip bag, I know itβs time for my favorite brunch recipe - lazy migas! The perfect way to use broken up tortilla chips, but feel free to get your aggression out by lightly crushing full chips or be an overachiever and fry cut tortillas in oil. There are endless tinkerings here!"

Ingredients

3-4 eggs

Β½ tsp Low & Slow Chili Powder

2 tsp butter or oil

β c chopped onion (optional)

1 medium tomato, chopped (optional)

1 cup tortillas chips, crushed

Salt & pepper, to taste

Optional toppings: shredded cheese, chopped scallions, cilantro, salsa, avocado, pickled jalapeΓ±os
Directions
Beat eggs in bowl with chili powder.
Heat oil pan on medium and sautΓ© onions until translucent, if using, and then tomato, if using, until they soften.
Add the eggs. When eggs are lightly set, add tortilla chips β you want them to slightly soften but still hold a crunch. Cook until eggs are soft but set. Add salt & pepper to taste.
Serve immediately with whatever toppings your heart desires! I love pickled jalapeΓ±os, cilantro, and some shredded cheese.
