Ori's Chicken & Veggie BBQ Skewers

Ingredients

10-12 wooden skewers, soaked in water for 30 minutes

1.5 lbs boneless skinless chicken thighs (or your protein of choice), cut into 1-1.5" cubes

3 bell peppers (red, orange, yellow), cut into 1-1.5" squares

3 large zucchini (or squash), cut into 0.5" rounds

1 large red onion, cut into quarters

Olive oil
-
2-3 tablespoons of Sweet Mesquite BBQ

1 tablespoon of salt (or more to taste)
Directions
Prepare your grill: 400°F if you have a thermometer, or if you're using an open grill, it should be hot enough that you can't hold your hand above the fire at grilling height for more than a few seconds.
Prepare the skewers: Gather all of your prepped ingredients into separate bowls, and cover with generous glugs of olive oil, salt, and Sweet Mesquite BBQ blend. Mix by hand to evenly coat. Get your skewer and add a slice of onion, zucchini, bell pepper, and chicken. Repeat until you reach the end of your skewer (leave 2" at either end to help maneuver the skewer on the grill).
Grill, baby, grill: Grill for 10 minutes, then (carefully) turn the skewer over for another 10 minutes. These skewers are perfect when veggies and meat starts charring — you'll start seeing the edges of the onions and chicken crisp up. Serve immediately over rice.
