Two of Spain's most iconic flavors — sangría and gazpacho — inspired two delicious vinegars. Lindera Farms, one of America's finest craft fermenters, teamed up with chef José Andrés to create a Sangría Drinking Vinegar and a Gazpacho Seasoning Vinegar, each built around slow-fermented, probiotic-rich brews and seasoned with Burlap & Barrel spices. The result is a pair of vinegars that taste like José's Spanish heritage filtered through Lindera's forage-forward approach to fermentation.

The Sangría Drinking Vinegar is seductive and fruit-forward, fermented with native American grapes, heirloom apples, hibiscus, quince, and foraged magnolias, juniper, and spicebush, with bay leaf, cinnamon, black lime, and black peppercorns woven throughout. Mix with Cava or a juicy Spanish red for instant sangría, or shake with sparkling water for a non-alcoholic tinto de verano.

The Gazpacho Vinegar is bright, peppery, and refreshing — made with cosmetically challenged tomatoes, peppers, and cucumbers that would otherwise go to waste, plus chef José Andrés' own Arbequina olive oil, purple dulse seaweed, and a touch of sherry vinegar. Use it to dress salads, brighten grilled meats and fish, or as a dipping sauce for raw vegetables.

Sangría Drinking Vinegar: grapes, magnolia flowers, hibiscus, bitter lemons, apples,  lemongrass, hibiscus, quince, honey, juniper, spicebush, bay leaf, cinnamon, black lime, black peppercorns, salt, organic cane sugar, assorted berries and orange oil

Cooking tips

  • Instant sangría or tinto de verano: Mix one part Sangría Drinking Vinegar with three to four parts Cava or Spanish red wine for a no-prep sangría, or with sparkling water for a bright, zero-proof alternative
  • The best summer salad dressing: Whisk the Gazpacho Vinegar with a little olive oil and flaky salt and drizzle over ripe tomatoes, grilled vegetables, or a simple green salad.
  • A chilled shot, straight from the bottle: Both vinegars are complex and bright enough to drink on their own over ice.
