Grilled or roasted, these Köfte Baharat-spiced kebabs are tender and tasty.
1 lb ground beef or lamb (or ground meat substitute)
1/2 large onion, chopped
1 cup loosely packed parsley, chopped
2 Tbsp Köfte Baharat
1/4 cup finely ground breadcrumbs
1 Tbsp kosher salt
Combine onion and parsley in the bowl of a food processor and blend until smooth. Add beef or lamb, breaking up into smaller pieces along with breadcrumbs, salt and Köfte Baharat. Blend for no more than a minute, until all of the ingredients are evenly incorporated.
Cook a small sample on the stove top to see if adjustments need to be made with the seasoning and allow to sit in the fridge for at least an hour.
After an hour, wrap the seasoned meat around skewers and grill over medium heat until cooked through. Or, roast in a 450˚ oven until cooked through.
Serve with fresh pita, yogurt sauce, and a salad of cucumber, tomato and red onions marinated in pomegranate molasses, red wine vinegar and Cured Sumac.
