This is a really, really special chili varietal called a Cobanero Chili, only cultivated in the area around the city of Cobán in Alta Verapaz, Guatemala. We were looking for farmers who grew this chili, which is one of the oldest domesticated chili varietals, and asked Don Amilcar (who also grows our cardamom and black lime) if he knew anyone. He did us one better and started growing them himself.

Help, I can't stop eating these chili flakes! The bright, fruity flavor and assertive heat go with basically everything - I had a breakfast of stone fruit, heirloom tomatoes, and a nice cheddar, and just sprinkled Cobanero over the whole plate. The only problem is that once I put my mask on to go outside, I discovered an unfortunate side effect - being trapped in an enclosed space with capsaicin vapors caused my whole face to catch fire. And I'd do it again.
I ordered these for a gift and haven’t had any feedback yet however we were gifted a few spices and are really enjoying them. The quality is fresh and fragrant.
Both items arrived very quickly.Cobanero chili is really hot so apply sparingly to foods like eggs or pizza. The chili crisp is more oily than I expected but not bad. Wish it was less more, more crisp. All around good experience thus far.
My husband and I loved the smoky flavor of these chilis. It brings some heat, but it has a much more in depth flavor than spicy. My husband doesn't have a high spice tolerance, and he loves throwing this on different dishes. We won't be able to look at chili flakes the same!
