Our Masala Simmer Sauce begins with a rich, tangy base of upcycled tomatoes from Matriark Foods, a company dedicated to reducing food waste by transforming farm surplus into delicious ingredients. From there, our longtime collaborator Barkha Cardoz — recipe developer and the force behind our Cardoz Legacy masalas — built on that foundation with a spice blend crafted with Burlap & Barrel’s single origin spices, inspired by her mother’s everyday Indian cooking.
Warm and toss with vegetables, beans or proteins for an easy, flavorful meal. For a saucier consistency, stir in equal parts coconut milk, broth or water. It’s also delicious as a base for pastas, soups or curries.
