Pumpkin Spice Syrup & Butter

Ingredients
2 cups pumpkin purée, fresh or canned

2 cups cane sugar
2 cups water

1 Tbsp Pumpkin Spice Blend
Directions
In a saucepan over medium heat, bring the puree, sugar, and water to a boil, then add the spice. Whisk until all is well-distributed.
Boil the syrup mixture until thick and the color of a rich caramel.
Strain through a fine-mesh sieve into a heatproof container. You can do this once or twice, depending on your desired consistency.
After the syrup has been strained, put the leftover thick pumpkin mash back into the saucepan and heat over low, stirring with a silicone spatula, until desired thickness is achieved. Use the syrup in drinks, such as a morning coffee, and put the butter on toast, in oats—wherever you’d use a jam.
