The Ripe, Regal & Rare Pepper
Pepper berries are allowed to mature to peak ripeness before picking. This produces a complex, fruity, purple-hued peppercorn with an aroma like strawberries and a kick like a jalapeño. We think of it almost as a “dessert” pepper — excellent to add at the end of cooking or to top raw ingredients like fruit, salads or even cakes.
