“Spiced nuts are a supremely versatile food gift since they’re as much at home being served with cocktails as they are packed into a backpack for a camping trip or brought along on a road trip. Making them from scratch lets you customize the flavors and is a lot more economical than buying tiny yet crazy-expensive bags from a fancy nut shop. The base coating on all of these nuts—a mixture of egg white, water, and salt—coats the nuts evenly, helps the sugar and spices cling tightly, and dries in the oven to a delicately crunchy crust that stores beautifully for several weeks. If you can’t find superfine sugar, process granulated sugar in a food processor for 1 minute.”

Ingredients
2/3 cup superfine sugar

2 tsp ground cinnamon

1 tsp ground ginger

1 tsp ground coriander
1 large egg white
1 Tbsp water
1 tsp table salt
1 pound raw whole almonds, cashews, walnuts, and/or shelled pistachios
Directions
Adjust oven rack to middle position and heat oven to 275 degrees. Line rimmed baking sheet with parchment paper. Mix sugar, cinnamon, ginger, and coriander in small bowl.
Whisk egg white, water, and salt in large bowl. Add nuts and toss to coat. Sprinkle sugar mixture over nuts, toss to coat, then spread evenly over prepared sheet. Bake until nuts are dry and crisp, about 50 minutes, stirring occasionally. Let cool completely on sheet, about 30 minutes. Break nuts apart.
