Tall, leafy carob trees grow wild along the Mediterranean coast of Turkey, where the climate produces thick, brown seed pods filled with intensely flavorful fruit. Women in nearby villages harvest the pods and separate the fruit by hand, continuing a tradition passed down through generations.

Sourcing

Our Dark Roasted Carob comes from wild carob trees growing along the Mediterranean coast near Antalya, Turkey, a region known for its warm climate, mineral-rich soils, and abundant coastal sunlight. The trees are about 50 feet tall, with reddish flowers and brown pods, inside of which is the carob seed.
Carob seeds are ripe in August and September, and they dry on the branch before being harvested. In nearby villages, women harvest the pods by hand, wash and separate the fruit inside — a seasonal tradition that has supported local households for generations. We work with longtime partners in Antalya who roast the fresh carob fruit slowly until it becomes deeply caramelized, then grind it into a superfine powder.
This careful, small-scale process transforms wild carob into something truly special: smooth, rich, and chocolate-y, with a complexity you won’t find in standard carob products.
