Our Flowering Hyssop Thyme has a beautiful floral, herbaceous flavor and aroma. It has an ancient history of culinary and medicinal usage in Turkey, where it is the primary ingredient in za'atar. Use it in place of regular thyme with roasted chicken, grilled vegetables and tomato sauces.

SOURCING

Flowering Hyssop Thyme is one of the endemic plants in Gaziantep, Turkey — it grows wild in the Mediterranean climate. The plants are collected and dried by local villagers. Our partners in Turkey then cut the thyme into small pieces.
The leaves are long and pointed, and the plant can reach a height of 4–15 inches. The vibrant bright purple flowers on the growing plants turn dark when dried.
