Our Flowering Hyssop Thyme is a very special herb that's only grown in the Middle East, where it is the primary ingredient in the za'atar spice blend (sometimes spelled zaatar, za'tar or zatar), along with sumac and sesame seeds. It has an ancient history of culinary and medicinal usage, and it has a beautiful floral, herbaceous flavor and aroma. Use it in place of regular thyme with roasted chicken, grilled vegetables and tomato sauces.

Using fresh herbs, while wonderful, can be a pain. Your thyme was so fresh and aromatic, that I used it instead. The stew was great. My husband was a fan. With your high-quality herbs, I find that I can expend a lot less time and energy and still have a great result.
Very aromatic at a good price. For most applications I prefer a slightly finer grind - so two quarter-turns on the Skeppshult grinder does the trick. The only other thyme I've found that matched the B&B (maybe bested it ever-so-slightly) is Daphnis & Chloe's whole dried Greek thyme flowers - - but it's more expensive and definitely requires more grinding.
Have used it with chicken and potatoes and today in a slow cooked bean/tomato dish. The house smells amazing and I am getting so hungry. I have used many different brands of dried thyme and this one is tops.
I've been using all of them constantly. They are so much more fresh than anything else i've had.
